Ocho Plata, lime, orange bitters-sugar cube, rose sparkling wine, orange

1. tequila ocho poached lobster tail salad, avocado, watercress, blood orange, pickled morita chili, coconut and yuzu vinaigrette

with

Two Ocho Vintages Neat, side by side in comparative tasting -

1 oz. Rancho "La Latilla" 2015 Plata

1 oz. Rancho :Puerta del Aire" 2016 Plata

2.  roasted delicata squash, spicy pickled cranberries, radicchio, roasted apple, toasted milk, pepita salsa

with

"Que hora es? Paloma-Thyme."

Ocho Plata, lime, blood orange, cinnamon agave, grapefruit, thyme

3.  rabbit duo-  confit rabbit and poached rabbit loin, roasted leeks and carrots, mole manchamantele, pomegranate

"Sangrita de la Casa" and Ocho Reposado (1.5 oz pour) Neat                    

3.5 ocho granita plata, prickly pear, lime

4.  spice cake, tangerine curd, ocho meringue, crumb
